Friends the main thing is Marination. Marination helps spices to penetrate.
Sharing My Recipe For A Proper Tandoori Marinade..
Ingredients
Yogurt, non-fat - 2 cups
Lemon juice fresh - 1/4 cup
Ginger root - 1 1/2 tblsps
Garlic minced - 3 cloves
Jalapeno peppers or other hot chilies, seeded, minced - 2 each
Bay leaves - 2 each
Paprika - 2 tsps
Cumin ground - 1 1/2 tsps
Coriander ground - 1 1/2 tsps
Turmeric - 1 tsp
Salt - 1 tsp
Black pepper freshly ground - 1/2 tsp
Cardamom seeds ground - 1/8 tsp
Method
1.Drain yogurt in a cheesecloth lined colander in the refrigerator for 2 hours.
2.Reserve the liquid for another use (baking or sauces).
3.Place the drained yogurt in a bowl and stir in the remaining ingredients.
4.Discard bay leaves before cooking.
